Recipe Introduction
Ruthie got this recipe years ago from a sister that she was friends with. It's wonderful served over white steamed rice.
List of Ingredients
- 2 C. dry pinto beans
- 5 C. Water
- 2 Tbsp. oil
- 2C. chopped tomatoes
- 1 large onion chopped (she'd NEVER put that in..ruth hates onion!)
- 1/4 C green pepper
- 1 large (or more) clove chopped garlic
- 2 tsp. salt
- jalapeno's to taste
Instructions
- Soak beans overnight or with the one-hour method on the bag.
- After soaking, bring water and oil to a boil with beans.
- Simmer while covered for about 1 1/2 hours.
- Add chopped tomatoes, onion, and rest of ingredients.
- Pour into a greased baking dish.
- Bake at 325 for 1 hour.
- Cover with grated cheese the last few minutes of baking until bubbly.
- Eat with rice and flour tortillas.
