    Ruthie got this recipe years ago from a sister that she was friends with. It's wonderful served over white steamed rice.


    List of Ingredients


    • 2 C. dry pinto beans
    • 5 C. Water
    • 2 Tbsp. oil
    • 2C. chopped tomatoes
    • 1 large onion chopped (she'd NEVER put that in..ruth hates onion!)
    • 1/4 C green pepper
    • 1 large (or more) clove chopped garlic
    • 2 tsp. salt
    • jalapeno's to taste


    Instructions


    1. Soak beans overnight or with the one-hour method on the bag.
    2. After soaking, bring water and oil to a boil with beans.
    3. Simmer while covered for about 1 1/2 hours.
    4. Add chopped tomatoes, onion, and rest of ingredients.
    5. Pour into a greased baking dish.
    6. Bake at 325 for 1 hour.
    7. Cover with grated cheese the last few minutes of baking until bubbly.
    8. Eat with rice and flour tortillas.
