- 1 pound baby carrots
- 1 stick melted butter or margarine
- 3 eggs
- 1 cup sugar
- 3 tablespoons flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla
Instructions
- Pam a 8 inch square baking dish. Cook carrots in salted water until done. Drain. Place margarine, eggs, baking powder and flour, vanilla in blender or processor. Add carrots a little at a time and puree. Pour into dish. Bake at 350 for 45 minutes or until set. Let stand 5 minutes before serving.
