List of Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1/8 tsp cayenne
- Paprika to garnish
- Salt and pepper to taste.
Instructions
- Cover the eggs with cold water by 1 1/2 inches in a 3 qt heavy saucepan and bring to a rolling boil.
- Reduce heat to low and cook eggs - covered completely, 30 seconds.
- Remove from heat and let stand covered for 15 minutes.
- Transfer eggs with a slotted spoon to a bowl of ice and cold water to STOP cooking - let stand 5 minutes.
- Peel the eggs.
- Cut each egg in half (lenghtwise).
- Carefully remove the yolks and mash in a bowl with a fork.
- Add mayonnaise, mustard, cayenne and stir with a fork until smooth.
- Season with salt and pepper.
- Fill a pastry bag with yolk mixture and pipe into egg whites.
- Garnish with a sprinkle of paprika.
- Serve room temp or chilled.
