Jim's Pumped Up Nachos

Recipe Introduction
When I waited tables at Chi Chi's we use to make our own SUPER nachos after work. These were the best pumped up version and I still make them!
List of Ingredients
- 1/2 lb flank steak
- 1 can refried beans
- 3 avocados
- 1/4 cup store bought salsa
- 1 small can sliced jaapeno peppers
- Sour cream
- Grated Cheddar Cheese
- Tortilla Chips
Instructions
- Sear the flank steak nder the broiler until done to taste.
- While the steak is cooking, heat up the can of beans on the stove.
- Mix a guacamole by mashing the meat of the avocado with 1/4 cup store bought salsa. (can be done by hand or in the food processor)
- When the steak is ready, chop it into bite size pieces.
- Place on a cookie sheet, restaurant style tortilla chips. Line them up as not to overlap.
- On each chip spread a thin layer of warm refried beans, once piece of steak, and one jalapeno slice. Cover each chip with a nice handful of shredded cheese.
- Place under the broiler until the cheese is melted. Do not over cook - just until all the cheese is melted.
- Remove and give each chip a spoonful of guacamole and sour cream.
- Place on serving plate and serve right away!
Final Comments
These are really filling - but they go quickly!
