Roasted Figs with Gorgonzola

Serves 4 for appetizers
List of Ingredients
- 2 tbsp caraway seeds
- 12 ripe figs
- 1 1/2 tbsp extra virgin olive oil
- 1/4 cup Gorgonzola cheese
- 1/4 cup lavender honey
Instructions
- Preheat oven to 400
- In a frying pan toast the caraway seeds over med heat, shaking pan until fragrant (about 3 mintues)
- Do NOT burn - set aside caraway seeds.
- Rub figs all over with extra virgin olive oil, then slice down through the stem and insert about 1 tsp cheese into each fig.
- Place fig slit side up on a baking sheet.
- Bake until gis are plump and shiny but do NOT burst. (About 10 minutes)
- Meanwhile drizzle a little honey on each of 4 dessert plates and place about 1/2 tbsp caraway seeds alongside, leaving room for the figs. Place 3 figs per plate and serve.
