Thanksgiving Bars

List of Ingredients
- BARS -
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 cup sugar
- 1 cup pecans - VERY finely chopped
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp Pumpkin Pie spice
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 large beaten eggs
- 1 15oz can of 100% pure pumpkin
- 1/2 cup canola oil
- 1/4 cup 1% lowfat milk
- 1/2 cup Mini Chocolate Chips
- FROSTING-
- 6 oz Cream Cheese
- 3/4 stick butter
- 4 cups powdered sugar
- 1 Tbsp cream
- 1 tsp vanilla
Instructions
- Preheat your oven to 350F
- Lightly oil coat a 15x10x1 inch baking pan (jelly-roll pan), with nonstick cooking spray and set aside.
- Whisk together the flour, whole wheat flour, sugar, pecans, baking powder, cinnamon, baking soda and salt in a large bowl - dry ingredients
- In a seprate bowl (also large) combine the eggs, pumpkin, canola oil and milk. wet ingredients.
- Add the dry mixture to the wet ingredients, 1 cup at a time and incorperate well. At this point also add the 1/2 cup of mini chocolate chips.
- Stir to combine
- Spread the batter evenly in the prepared pan and bake for 25 minutes or until a wooden toothpick inserted in the center comes out clean.
- Cool on wire rack.
- To make frosting add the cream cheese, butter, powdered sugar, cream and vanilla. Mix with beater until creamy.
- Frost when bars are cool.
