Recipe Introduction
I first had my favorite cocktail in Havana and many of them while in Cuba. This is one varation that works well!
List of Ingredients
- 8 (or more) fresh mint leaves
- 1 tbsp simple syrup
- 1 tbsp fresh lime juice
- Crushed ice
- 2 fl oz white rum (Havana Club if you can get it!)
- Club Soda
- 1/2 fl oz of dark rum
Instructions
- First make a simple syrup - combine 1/2 cup sugar and 1/2 cup water in a small saucepan and stir over low heat until the sugar dissolves.
- Remove the simple syrup from the heat and allow to cool.
- Place in a clean glass jar and refrigerate and use as needed. It will keep indefinitely and you can use for many cocktail recipes.
- THE MOJITO
- In a tall glass combine the mint, syrup and lime juice.
- Use a muddler or the handle of a wooden spoon to release the flavor of the mint. Muddle and pound the mint into the syrup and break the leaves apart.
- Fill the glass with crushed ice and add the white rum.
- Fill the glass with (almost to the top) with club soda.
- Carefully float the dark rum on the top and add a mint sprig for garnish.
Final Comments
This makes one MOJITO. When I was in Cuba they use a lot more mint than most bars do in America. Some mojitos were dark green in color. So do like they do in Cuba and don't be shy with the fresh mint!
