Buttermilk Biscuits

This is a great Texas biscuit recipe.
List of Ingredients
- 5 cups all purpose flour
- 1 tsp baking soda
- 1 tbsp baking powder
- 2 tsp salt
- 2 1/2 tbsp sugar
- 2 packages (1/4 oz) active dry yeast
- 1 cup (2 sticks) unsalted butter cut into small pieces plus 4 tbsp unsalted butter melted and cooled.
- 2 cups buttermilk
Instructions
- Preheat the oven to 450
- Line 3 baking sheets with parchment.
- Sift together the flour, baking soda, salt and sugar.
- Place 1/4 cup warm water (about 110) in a small bowl.
- Sprinkle with yeast
- Allow to stand 5 minutes.
- Use a pastry cutter to blend the 1 cup of butter into the flour mixture until it resembles a coarse meal.
- Stir in yeast mixture and buttermilk.
- Turn onto a floured surface and knead until smooth, 2 to 3 minutes.
- Roll dough to a thickness of 1/4 in.
- Cut out 2 1/2 inch rounds place 2 in apart on the baking sheets.
- Knead dough scraps lightly and continue to cut rounds.
- Brush edges with melted butter, fold rounds in half and press edges to seal.
- Brush the tops with butter.
- Place 2 baking sheets in the oven leave third sheet at room temp.
- Bake 6 minutes.
- Rotate baking sheets between oven racks and bake until lightly golden. 5 or 6 minutes more.
- Bake the 3rd sheet on center rack for 8 to 10 minutes.
SERVE WARM with butter
