Grandma Schnobrich's Spaetzle

Recipe Introduction
Family recipe - grandma made great spaetzle!
List of Ingredients
- 1 lb flour
- 1/2 cup milk
- 4 whole large eggs
- 1 cup soda water
- 1 tsp salt
Instructions
- Stift the flour into a bowl and add the milk and soda water - mix well.
- Add the eggs and salt and mix -
- Beat the dough with a wooden spoon until small bubbles form.
- Let the dough rest for 1/2 hour.
- In the meantime boil up plenty of salted water in a large pot.
- Cut or slice the Spaetzle and dip into boiling water - bring each batch to a boil then lift out with a slotted spoon and drain in a colander and rinse off with cold running water.
- Spread the spaetzle on a board to steam off the moisture.
- To cut off some German's have a sieve - but grandma use to cut the dough off on a wooden board in a scraping motion. She would dip her knife into cold water after each cut to prevent the dough from sticking to the knife.
- Serve with butter or as an accompaniment to any meat or gravy dish.

Where Grandma Minnie made the Big Bread Dumplings - Grandma Schnobrich made Spaetzle. Each was about the region their grandparents came from in Germany.
One other treat Grandma would make was to take a 9X13 casserole dish and fill it alternately with layers of sauerkraut and spaetzle - finishing with the kraut. Heated in the oven.
