List of Ingredients
- 1/4 cup butter (soft)
- 1 1/2 cups brown sugar (pack)
- 1 egg
- 1 teaspoon pure vanilla extact
- 1 1/2 cups all purpose flour
- 1 teapoon baking powder
- 1/8 teaspoon salt
- 1 cup dairy sour cream
- 4 cups fresh rhubard cut into 1/2 inch pieces
- 1/4 cup granulated sugar
- 1/2 teaspoon freshly grated nutmeg
Instructions
- Preheat the oven to 375
- Line a greased 8X5 loaf pan with parchment paper
- Beat the butter and brown sugar in a bowl until creamy.
- Beat in egg and vanilla
- In another bowl mix the flour baking powder and salt
- Stir into creamed mixture alternately with sour cream.
- Stir in rhubarb
- Pour the mixture into prepared pan
- Mix granulated sugar with grated nutmeg. Sprinkle over bater
- Bake 40 minutes or until wooden toothpick inserted in cnter comes out clean.
- Cool in pan for 30 minutes.
- Remove from pan to a cooling rack
Final Comments
Serve with fresh whipped cream. Leftovers can refrigerate. Serves about 12
