    Recipe Introduction


    Grandma Minnie worked at Eibners in New Ulm. This was one of their famous recipes.


    List of Ingredients


    • 1/4 cup butter (soft)
    • 1 1/2 cups brown sugar (pack)
    • 1 egg
    • 1 teaspoon pure vanilla extact
    • 1 1/2 cups all purpose flour
    • 1 teapoon baking powder
    • 1/8 teaspoon salt
    • 1 cup dairy sour cream
    • 4 cups fresh rhubard cut into 1/2 inch pieces
    • 1/4 cup granulated sugar
    • 1/2 teaspoon freshly grated nutmeg


    Instructions


    1. Preheat the oven to 375
    2. Line a greased 8X5 loaf pan with parchment paper
    3. Beat the butter and brown sugar in a bowl until creamy.
    4. Beat in egg and vanilla
    5. In another bowl mix the flour baking powder and salt
    6. Stir into creamed mixture alternately with sour cream.
    7. Stir in rhubarb
    8. Pour the mixture into prepared pan
    9. Mix granulated sugar with grated nutmeg. Sprinkle over bater
    10. Bake 40 minutes or until wooden toothpick inserted in cnter comes out clean.
    11. Cool in pan for 30 minutes.
    12. Remove from pan to a cooling rack


    Final Comments


    Serve with fresh whipped cream. Leftovers can refrigerate. Serves about 12
