Grandma Minnie (from Eibner's)
Recipe Introduction
A ground beef casserole from Eibner's in New Ulm.
List of Ingredients
- 1/2 Lb ground beef
- 1 medium onion (diced)
- 3 Tbsp tomato paste
- 3/4 cup red wine
- 2 cups rice (cooked)
- 1 can peas (8oz) (drained)
- 1 Tbsp parmesan
- 4 Tbsp whipping cream
- 3 Tbsp butter
- Salt, pepper and thyme to taste
Instructions
- Brown the beef and discard the fat.
- Add onion and saute with beef until the onion is translucent.
- Add the tomato paste, red wine, salt, pepper and a dash of thyme.
- Stir until mixed.
- Add the cooked rice and drained can of peas.
- Mix thourghly and pour into a greased casserole (2 1/2 qts)
- Drizzle the whipping cream over the top.
- Dot with 3 Tbsp of butter and sprinkle with parmesan over the top.
- Bake in a preheated overn at 375 for 20 - 30 minutes.
