Recipe Introduction
Pastitsio is one of Jim's all time favorites. It's a type of Greek casserole. The chef on the Silver Sea's shared his recipe with me!
List of Ingredients
- 2 Tbsp extra virgin olive oil
- 1 onion - chopped
- 1 garlic clove - crushed
- 1 lb ground beef - LEAN
- 1 1/4 cups beef stock
- 2 tsp tomato paste
- 1/2 tsp ground cinnamon
- 1 tsp chopped fresh mint
- Salt and pepper to taste
- 1/2 lb macaroni
- 1/4 cup butter
- 1/2 cup all purpose flour
- 2 cups milk
- 1/2 cup plain yogurt
- 1 1/2 cups grated kefalotiri cheese (6oz)
Instructions
- Preheat the oven to 375
- In a skillet heat the oil
- Add onion and garlic and cook until soft
- Add beef and stir until browned
- Stir in stock, tomato paste, cinnamon, mint, salt and pepper.
- Simmer 10 to 15 minutes or until sauce is reduced.
- Meanwhile in a pan of boiling water cook macaroni 8 minutes or until tender.
- Drain rinse with cold water and set macaroni aside.
- In a saucepan melt the butter.
- Stir in the flour with the butter and cook 1 minute.
- Gradually stir in the milk and yougurt and simmer for 5 minutes.
- Season with salt and pepper.
- Spread half the macaroni mixture over bottom of a large gratin or souffle dish.
- Cover with meat sacue then top with remaining macaroni.
- Sprinkle remaining cheese over the top.
- Bake for 45 minutes or until browned.
