This recipe is from Kathy's mom - Ritzy.
List of Ingredients
- 6 to 8 piece of cooked chicken deboned and skinned.
- 1/2 cup butter, melted with 1/2 cup flour - cook to make a roux.
- 1 to 2 tsp curry powder, add to roux.
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups mushrooms
- 1 small onion
- 4 cups chicken broth
- 1 small bag of frozen petite green peas
- Potato chips for top of casserole
Instructions
- Cook your roux - add the butter to the flour over heat and stir.
- Add the curry powder to the roux.
- Slowly add 4 cups of checken broth to the flour mixture. Cook until thickened.
- In a seperate pan saute the 2 cups mushrooms with the 1 small chopped onion. Saute in butter.
- Rinse 1 bag of small petite green peas then cut or shred the chicken into pieces.
- Mix the shredded chicken, sauted mushrooms, onions and peas with the sauce mixture.
- Place in a 9X13 butter casserole dish.
- Crumble potato chips on top and cook at 400 degrees for 20 minutes.
