Beef Curry with Seven Boys

List of Ingredients
- 2/3 cup finely chopped onion
- 4 Tbsp butter divided
- 2 1/2 Tbsp curry powder
- 2 cups beef bouillon or broth
- 1 cup coconut milk (canned in most Asian markets)
- 1/8 tsp pepper
- 3 Tbsp preserved ginger chopped or grystallized
- dash of cloves
- 1 chopped mint leaf
- 2 1/2 lbs beef chuck or round, cut into 1 inch cubes.
- Cooked Rice
- SEVEN BOYS ---
- 1 small green pepper chopped
- 3/4 cup chopped salted peanuts
- 3/4 cup grated coconut
- 3 hard boiled eggs chopped
- 3/4 cup chutney
- 3/4 cup grated stuffed green olives
- 3/4 cup cooked and crumbled bacon
Instructions
- Saute the onion in 2 Tbsp butter.
- Add curry, broth and coconut milk.
- Stir in pepper, ginger, cloves and mint.
- Remove from heat.
- Brown beef in remaining 2 Tbsp butter.
- Place meat and curry mixture in crock pot or slow cooker and cook on medium heat for six hours.
- Make the rice according to instructions
- Prepare the seven boys in seven bowls.
- Serve the curry over the rice and pass the seven boys around the table to add zest and individual flavor.
