Recipe Introduction
A Clafoutis is a French Country cake/custard/grunt type dessert.
List of Ingredients
- 3 Tbsp sliced almonds
- 3 Tbsp unsalted butter (melted)
- 2/3 cup all purpose flour
- 2/3 cup plus 2 tsp sugar
- 1/4 tsp salt
- 4 large whole eggs
- 3 large egg yolks
- 1 1/4 cups heavy cream
- 2 Tsp vanilla
- Finely grated zet of 1 lemon
- 1 lb cherries (pitted)
- 1/4 cup kirsch or brandy
Instructions
- Start by pitting the cherries and soaking them in the brandy, allow to sit and soak brandy, while you do the rest of recipe.
- Preheat the oven to 350
- Place the sliced almonds in a single layer on a rimmed baking sheet. Toast until they are fragrant - less than 5 minutes....watch closely Don't burn! Allow to cool.
- Melt 1 tbsp of butter and coat your individual bowls with butter and set aside (6 oven proof bowls)
- Place flour, 2/3 cup sugar, salt, and almonds into the bowl of the food processor and pulse until mixture is finely gound.
- Transfer to a medium bowl and add the eggs and egg yolks, 3/4 cup heavy cream, vanilla and lemon zest and whisk to combine.
- Place in the refrigerator for 30 minutes or slightly longer.
- Divide the soaked cherries into the six bowls.
- Whisk the chilled batter with 2 tbsp of melted butter.
- Pour the batter of the cherries in the oven proof bowls.
- Place on a rimmed baking sheet and bake in the 350 degree oven for 20 mintues.
- At 20 minutes take them out and and sprinkle with remaining sugar and bake for anohter 15 to 20 minutes or until golden brown.
- Transfer to a wire rack and allow to cool.
- Whip remaining 1/2 cup cream until soft peaks form. Serve slightly warm or at room temp with whipped cream.
