Chilled Melon with Mint and Balsamico

List of Ingredients
- 1 mdeium vine ripe melon - honeydew, Charlyn, crenshaw or cantaloupe.
- Traditional good quality Balsamic Vinegar
- a few sprigs of fresh mint
Instructions
- Cut the melon in half through it's poles. Scoop out the seeds and cut into wedges.
- Trim the skin off the wedges and arrange them artfully on a plate.
- Sprinkle with vinegar.
- Take a few leaves of the mint and cut them ito a fhiffonade and sprinkle this over the melon as well.
- Garnish with the rest of the mint.
- Serve well chilled.
- This can be made up to an hour ahead. Just cut the mint at the last minute prior to serving.
Final Comments
Other fruits also work nicely - strawberries, peaches or nectarines.
