Our friend Maureen lived in France and this is where this recipe is from.
List of Ingredients
- 1/2 Cup Sugar
- 3 tbsp plus 1 tsp water
- 3 eggs
- 2 cup milk
- 1/2 tsp vanilla
Instructions
- Combine 6 tablespoons of the sugar plus 3 tablespoons wter in a saucepan. Heat gentely, stirring until dissolved, then raise heat to medium and cook to a rich carmel color, without stirring.
- Carefully add 1 teaspoon of boiling water and pour into a 1 qt souffle dish or mold.
- Let set.
- Beat the eggs and remaining sugar together.
- Heat the milk almost to boiling (DO NOT BOIL).
- Add it to the egg mixutre with the vanilla
- Mix Well
- Strain mixture into the souffle dish and place dish in a roasting pan containing 1 inch of water.
- Bake in a preheated 275 degrees oven for 2 hours or until set.
- Cool then invert onto a serving dish.
