Cuban Rice Pudding

Recipe Introduction
This pudding does have rum in it! In Cuba it's called PUDIN DE ARROZ CON RON.
List of Ingredients
- 1/4 cup light rum
- 5 cups cooked long grain white rice
- 2/3 cup light brown sugar
- 2/3 cup raisins
- 10 large eggs (BEATEN)
- 4 cups milk
- 1 tsp salt
- 2 tsp lemon juice
- butter for greasing baking dishes
Instructions
- Preheat the oven to 350.
- In a large mixing bowl combine the rum, cooked cooled rice, brown sugar, raisins, eggs, milk, salt and lemon juice.
- Grease two 8 in round baking dishes with butter
- Divide the rice mixture evenly between the baking dishes and bake 40 to 50 minutes - until set.
- Chill in the refrigerator and serve cold.
Final Comments
This is a traditional rice pudding served at the end of a Cuban feast!
