Really good and rich. Not really a cake - more like bars.
List of Ingredients
- 1 cup fresh rhubarb, chopped
- 1 14oz can sweetened condensed milk
- 1/4 cup fresh lemon juice
- 1/2 teaspoon pure vanilla extract
- 28 vanilla wafers
Instructions
- Cook chopped rhubarb with a little water in a saucepan to make tender. Set aside
- Stir weeetened condensed milk, lemon juice and vanilla in a bowl, mix well.
- Stir in the cooked rhubarb
- Line a narrow 7X5 inch baking pan with waxed paper.
- Fill with alternate layers of rhubarb mixture and wafers, ending with a layer of wafers.
- Freeze
- Remove from the pan to a serving platter, remove wax paper.
- Cutie into slice and serve
