Pear Buttermilk Upside Down Cake

This was a recipe we made at Cooks and Books and Corks in Danville. It was everyone's favortie part of the class!
List of Ingredients
- 9 Medium ripe pears - preferably round in shape
- 4 oz butter
- 1/2 cup brown sugar
- 8 oz butter
- 1 1/2 cup sugar
- 1 tsp vanilla
- 4 eggs
- 2 1/4 cup all purpose flour
- 1 1/2 tsp baking powder
- 1 Tbsp baking soda
- 1 tsp salt
- 1 cup buttermilk
Instructions
- Pear and core the pears. Cut the pears in half.
- Heat 2 oz ob the butter in a large saute pan until it stars to brown.
- Add 1/2 the pears curved side down and saute until brown.
- Sprinkle with 1/2 the brown sugar.
- Cook until the sugar is dissolved and becomes thick and syrupy. Pour out onto a sheet pan or plate.
- Repeat with remaining pears.
- Arrange the curved side of the pears halves against the bottom of a buttered 10 X 3 deep cake pan. Pack the pears in and pour the brown sugar syrup over. Set aside while you make the cake.
- Whip together butter and sugar.
- Add vanilla and eggs one by one.
- Mix together flour, salt, baking powder, baking soda.
- Add alternately in two parts with buttermilk.
- Spoon batter over pears and smooth.
- Bake until knife inserted in center comes out clean. (50 minutes to 1 hour)
- Cool 20 minutes and then inver over your serving plate leaving the panon the cake for another 20 minutes to prevent the cake from splitting.
- Cool completely prior to serving.
Final Comments
Serve with whipped cream on top - VERY GOOD!
