Swedish Christmas Rice

List of Ingredients
- 1 qt milk
- 1/2 cup cream
- 2/3 cup uncooked rice
- 1 egg beaten
- 1 tsp vanilla
- 3/4 cup sugar
- dash of salt
Instructions
- Heat the milk and cream to boiling.
- Add the rice
- Cook over low heat for 1 hour or until rice is done.
- Combine the egg, vanilla, sugar and salt. Add to the rice.
- Cook 5 to 7 minutes over a low heat.
- Put the rice in a large bowl and refrigerate for at least 45 minutes prior to serving.
- Make the lingonberry sauce that follows this recipe.
- When you take the rice out of fridge top each dish with a little scoop of ligonberries.
- You can also add a sprinkle of cinnamon.
Final Comments
The trick is to find ligonberries. Sometimes it's a real trick! Mom did not like the jelly ligonberries that come in a jar - but if it was the LAST, LAST resort she would use them! But REAL ligonberries are MUCH prefered! The Lingonberry Sauce follows:
