    List of Ingredients


    • 1 tbsp olive oil
    • 2 lbs of lean ground beef
    • 1/2 cup chopped white onion
    • 1/2 cup diced red bell pepper, 1/2 cup yellow bell pepper
    • 1/2 tbsp of chopped garlic
    • 3 bay leaves
    • 1 tsp of toasted ground cumin
    • 1/4 cup of sliced green olives
    • 1/4 cup of sliced toasted almonds
    • 1/4 cup of Golden raisins
    • 3/4 cup tomato paste
    • 1/4 cup chopped parsley


    Instructions


    1. Begin by heating a medium dutch oven over high heat.

    2. Add a tbsp of olive oil and the ground beef.

    3. Be sure to distribute the beef evenly thoughout the pan.

    4. Allow beef to brown on the bottom by not moving it for five minutes.

    5. As the meat begins to lose it's red tint start mixing in the onions, peppers, garlic, bay leaves and cumin.

    6. Let it cook for 7 minutes until the vegetables become translucent.

    7. Be sure to mix it thoroughly with a spoon so that the tomato paste is well inforporated.

    8. Season to taste with salt and pepper.



    Final Comments


    Serve with or over rice.
