List of Ingredients
- 1 tbsp olive oil
- 2 lbs of lean ground beef
- 1/2 cup chopped white onion
- 1/2 cup diced red bell pepper, 1/2 cup yellow bell pepper
- 1/2 tbsp of chopped garlic
- 3 bay leaves
- 1 tsp of toasted ground cumin
- 1/4 cup of sliced green olives
- 1/4 cup of sliced toasted almonds
- 1/4 cup of Golden raisins
- 3/4 cup tomato paste
- 1/4 cup chopped parsley
Instructions
- Begin by heating a medium dutch oven over high heat.
- Add a tbsp of olive oil and the ground beef.
- Be sure to distribute the beef evenly thoughout the pan.
- Allow beef to brown on the bottom by not moving it for five minutes.
- As the meat begins to lose it's red tint start mixing in the onions, peppers, garlic, bay leaves and cumin.
- Let it cook for 7 minutes until the vegetables become translucent.
- Be sure to mix it thoroughly with a spoon so that the tomato paste is well inforporated.
- Season to taste with salt and pepper.
Final Comments
Serve with or over rice.
