    Recipe Introduction


    Lutfisk is served Christmas Eve in most Swedish or Norwegin homes. Swedes do it with cream sauce, in Norway they do it with butter. Lutfisk is Cod Fish soaked in lye. WE LOVED IT - Most people do not!


    List of Ingredients


    • 3 tbsp butter, plus 2 tbsp butter
    • 1 cup heavy cream
    • 3 tbsp flour
    • 1 1/2 cups milk
    • Whole Lutfisk


    Instructions


    1. Drop lutfisk into salted water and cook for 7 to 10 minutes.
    2. Drain
    3. Skin and remove all bones. (You can also buy frozedn lutfisk that is deboned).
    4. In a seperate saucepan add the 3 tbs butter, 1 cup cream and 3 tbsp flour and 1 1/2 cups milk and simmer (bo not boil) whisk constantly.
    5. Pour over the lutfisk.
    6. Add 2 tbsp of butter and simmer for about a half hour.


    Final Comments


    Serve over potatoes and with rice pudding for dessert.
