Potato and Goat Cheese Gratin

Lighter version of this rich dish
List of Ingredients
- Extra virgin olive oil
- 1 1/2 lbs russet potatoes, peeled anc cut into 1/8 inch thick coins
- 3 tsp all purpose flour
- 3 tsp minced fresh chives
- 1 tsp minced fresh thyme
- 1 5.5oz package of fresh goat cheese grumbled (about 1 cup)
- 1 3/4 cups low fat milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 350
- Lightly oil 10 in diameter glass pie dish
- Slightly overlap 1/3 of the potato slices on the bottom of the dish.
- Sprinkle 1 tsp flour and 1 tsp minced chives and 1/3 of minced thyme over it.
- Sprinkle with salt and pepper to taste.
- Dot with 1/3 of goat cheese
- Repeat the layering 2 more times
- Cover the dish with aluminum foil and bke for 1 hour
- Remove foil and bake until potatoes are tender and the top is golden. 20-25 minutes longer
- Let stand 15 minutes prior to serving
