    Recipe Introduction


    Lighter version of this rich dish


    List of Ingredients


    • Extra virgin olive oil
    • 1 1/2 lbs russet potatoes, peeled anc cut into 1/8 inch thick coins
    • 3 tsp all purpose flour
    • 3 tsp minced fresh chives
    • 1 tsp minced fresh thyme
    • 1 5.5oz package of fresh goat cheese grumbled (about 1 cup)
    • 1 3/4 cups low fat milk
    • Salt and pepper to taste


    Instructions


    1. Preheat the oven to 350
    2. Lightly oil 10 in diameter glass pie dish
    3. Slightly overlap 1/3 of the potato slices on the bottom of the dish.
    4. Sprinkle 1 tsp flour and 1 tsp minced chives and 1/3 of minced thyme over it.
    5. Sprinkle with salt and pepper to taste.
    6. Dot with 1/3 of goat cheese
    7. Repeat the layering 2 more times
    8. Cover the dish with aluminum foil and bke for 1 hour
    9. Remove foil and bake until potatoes are tender and the top is golden. 20-25 minutes longer
    10. Let stand 15 minutes prior to serving
