    Classic Beef Stroganoff with Buttered Egg Noodles.


    List of Ingredients


    • 1 lb of beef tenderloin, trimmed
    • 3 1/2 Tbsp of butter, 2 tbsp for meat, 1 1/2 tbsp for the noodles
    • 1 medium onion thinly sliced
    • 3/4 cup chicken broth
    • 1 tsp Hungarian Paprika (sweet)
    • 4 oz mushrooms, trimmed and sliced
    • 1 tbsp fresh lemon juice
    • 1 tbsp brandy
    • 1 tsp dried tarragon
    • 1/2 tsp salt
    • 1/8 tsp ground black pepper
    • 1/2 cup sour cream
    • 3 tsp chopped fresh dill
    • 1 pkg egg noodles


    Instructions


    1. Cut tenderloin into 3/8 inch thick slices and then cut itno 1 1/2 by 3/8 strips.
    2. In a 12 inch skillet, melt the butter over medium heat. Add 1/2 of beef (do not crowd) and cook until browned, using slotted spoon to transfer meat to a bowl or dish when it's browned on all sides. Repeat the process with remaining beef.
    3. Reduce the heat to medium low and stir in the onion and cook until tender,
    4. Add 1/4 cup broth and paprika and cook, stirring until the onion is very tender (about 5 mintues)
    5. Add mushrooms, lemon juice, brandy, tarragon, salt and pepper to cook, stirring until mushrooms are tender and almost all liquid has evaporated - about 8 minutes.
    6. Stir in beef remaining 1/2 cup broth, sour cream (be generous) and 2 tsp dill. Cook until heated through (Do not boil). about 2 minutes.
    7. Sprinkle with remaining 1 tsp dill and serve over noodles.
    8. NOODLES - Have the water ready to boil when you start the meat. Add the egg noodles while you are starting to add the mushrooms. Cook per package instuctuion, when ready strain and add 1 1/2 tbsp butter to noodles and shake coating all noodles. Let stand until the stroganoff is ready to serve.


    Final Comments


    You can use flat leaf parsley for the dill. Also use good beef tenderloin. This is NOT stew meat....it's a meat dish and deserves a good grade of meat.
