    List of Ingredients


    • 3 to 5 lbs of pork loin - boneless
    • 5 stalks of celery (chopped)
    • 1 potato per person (chopped)
    • 2 large limes (if small - 3)
    • 3 cloves garlic
    • 1 Tbsp oregano
    • 1 tsp basil leaves
    • 1 tsp caraway seed
    • Salt and pepper to taste


    Instructions


    1. Preheat the oven to 350.
    2. Place pork in a Dutch Oven with 1/2 inch water.
    3. Squeeze limes over the meat.
    4. Season with oregano, garlic, basil, caraway seed, salt and pepper.
    5. Add all the vegetables in chunks.
    6. Cover the Dutch oven and place inside oven at 350, cook covered for 1 hour.
    7. Uncover for the last hour and bast the meat and turn the vegetables ever so often so they brown and will not dry out on one side.
