Grandma's Pork Roast

List of Ingredients
- 3 to 5 lbs of pork loin - boneless
- 5 stalks of celery (chopped)
- 1 potato per person (chopped)
- 2 large limes (if small - 3)
- 3 cloves garlic
- 1 Tbsp oregano
- 1 tsp basil leaves
- 1 tsp caraway seed
- Salt and pepper to taste
Instructions
- Preheat the oven to 350.
- Place pork in a Dutch Oven with 1/2 inch water.
- Squeeze limes over the meat.
- Season with oregano, garlic, basil, caraway seed, salt and pepper.
- Add all the vegetables in chunks.
- Cover the Dutch oven and place inside oven at 350, cook covered for 1 hour.
- Uncover for the last hour and bast the meat and turn the vegetables ever so often so they brown and will not dry out on one side.
