    MOCK CHICKEN LEGS

    Source of Recipe

    Mom (Lolly)

    Recipe Introduction

In Mom's own words "Order from butcher veal and pork cubes (not ground) then have them added onto a stick. You can order them 1/2 veal, and 1/2 pork or 2 pork to 1 veal (runs a little cheaper). Don't get them too big or they get like turkey legs. 5inch stick and about 1/2inch cube is big enough"

    List of Ingredients

    • Veal and pork mock chicken legs (see above) (6 legs)
    • Salt and pepper
    • soda crackers
    • 2 eggs
    • 1 tbsp water

    Instructions

    1. Preheat oven to 350 degrees.
    2. Salt and pepper each "mock chicken leg"
    3. Mix eggs and a tbsp of water.
    4. Roll out the soda crackers until very fine crumbs.
    5. Dip each leg 2 times, once in eggs and then into cracker crumbs.
    6. Brown in a frying pan with a little oil.
    7. Cover with water in a baking dish, Then bake uncovered in the 350 degree oven for 1 hour.

    Final Comments

This was always a birthday favorite in the Schnobrich house grouwing up.
