The Blind Dog Dreamloaf

Recipe Introduction
This is the famous meatloaf served at the Blind Dog in Park City, Utah. We all fell in love with this meat loaf and it may be the best one we have ever tasted. The kid's love it!
List of Ingredients
- 1/2 lb Ground Pork
- 1/2 lb Ground Veal
- 1 lb Ground Beef
- 1 yellow onion (diced)
- 1 red pepper (diced)
- minced garlic
- 1/4 cup chopped parsley
- 2 eggs - beaten
- 2 cups monterey jack cheese - shredded
- 1 Tbsp soy sauce
- 1 Tbsp Worcestershire sauce
- 2 sleeves Ritz Crackers - ground
- 1 cup ketchup
- salt and pepper
- more ketchup for the top of meatloaf
- sliced bacon
Instructions
- Preheat the oven to 400
- Saute the onion, pepper and garlic together. Remove and allow to cool.
- Mix all the meats together
- Add the eggs, cheese, soy, worcestershire, crackers, parsley and 1 cup ketchup. MIX WELL
- Add the cooled onion, garlic and pepper mix.
- Season with salt and pepper
- Make sure everything is mixed very well and shape into a loaf and fit into a loaf pan.
- Slather with ketchup and place bacon strips lenghtwise over the loaf.
- The Blind Dog places the rack in a baking dish when baking - this setp is not 100% necessary (but helps).
- Bake for 45 minutes to one hour. It depends on the oven. You want the loaf cooked through - but NOT dry!
