Microwave Pineapple Upside-Down Cake

Pretty good and easy for a Microwave cake
List of Ingredients
- 2/3 cup packed light brown sugar
- 4 Tbsp butter (cut into pieces)
- 1 can (20 oz) pineapple rings, drained
- 7 to 10 Maraschino cherries
- 1 pkg (18.25 oz) yellow cake mix
- 1 cup water
- 1/4 cup vegetable oil
- 3 eggs
Instructions
- Sprinkle brown sugar over the bottom of micorwave safe 10 inch round cake pan or 9x13 baking dish.
- Dot with butter
- Microwave at power 10 (100%) for 1 1/2 minutes.
- Evenly distribute mixture
- Arrange pineapple rings in single layer over mixture and place a sherry in the hole of each ring.
- Combine cake mix, water, oil and eggs. Beat well.
- Spoon batter into pan and micowave at power 7 (70%) for 14 -16 minutes.
- Let stand for 5 minutes.
- Loosen with a knife and carefully inver onto a platter.
