    Fusilli with Cream and Mushrooms

    Great simple pasta


    List of Ingredients


    • 14 oz fusilli
    • 1 tbsp olive oil
    • salt and fresh ground pepper
    • 2/3 cup light cream
    • 2 oz dried porcini mushrooms, soaked, drained and chopped.
    • 2 Tbsp butter
    • 1/2 cup grated Parmesan cheese


    Instructions


    1. Cook the pasta in a large pan of steadily boiling water until al dente with the olive oil and 1 tsp salt.
    2. Meanwhile pour the cream into a double boiler together with the porcini.
    3. In a seperate pan melt the butter over low heat and stir in the Parmesan cheese.
    4. Drain the pasta thoroughly and transger to a heated tureen.
    5. Pour in the cream and butter sauces toss well.
    6. Season with black pepper.
    7. Serve immediately
