    Linguine in Clam Sauce

    This is a favorite of Will Brown


    List of Ingredients


    • 1/2 cup butter
    • 1/4 cup olive oil
    • 4 cloves garlic - minced and pressed
    • 3 (6 1/2 oz) cans of chopped clams
    • 1 tsp oregano leaves
    • 1 tsp dry basil
    • 1/4 tsp crushed red pepper
    • 1 1/2 cup chopped parsley
    • 1 lb linguine
    • Boiling Salted Water


    Instructions


    1. In a 2 qt pan over medium low heat, melt butter in olive oil.
    2. Add garlic and cook until golden.
    3. Drain the juice from at least 2 of the cans of clams into the butter mixture. (You can use 3 if like a juicier sauce for soaking garlic bread)
    4. Add oregano, basil, and the the crushed red pepper and simmer for 3 minutes.
    5. Add the drained clams, parsley and simmer about 5 minutes.
    6. Meanwhile have the linguine cooking per the package directions in a large saucepan until al dente.
    7. Drain and toss the linguine with the clam sauce.
    8. Serve with fresh grated Parmesan cheese and garlic bread.
