Recipe Introduction
A cataplana is a copper Portuguese cooking pan. This cataplana is made in a Dutch oven and the end result is very near the Portuguese version.
List of Ingredients
- 2 tbsp olive oil (or enough to coat the bottom of the Dutch oven)
- 1 1/2 cups favorite salsa (can use red or green)
- 2 medium potatoes, peeled and thinly sliced
- 2 whole skinless boneless chicken breast, halved
- 1 medium onion thinly sliced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 350
- Place the olive oil in the bottom of the dutch oven, circle to coat the entire bottom of the pan.
- Add 1/2 of your salsa to coat the layer over the olive oil.
- Top with one layer of sliced potato slices.
- Now lay the chicken breasts on top of the potatoes.
- Over the breasts add one layer of onion slices.
- Pour over the remaining 1/2 of the salsa.
- Sprinkle with oregano.
- Salt and pepper to your taste.
- Cover and bake in the oven for 1 1/2 hours at 350.
- Serve.
Final Comments
We prefer green salsa - but other folks prefer red!
