Irene's Marvelous Chicken

List of Ingredients
- 4 skinless, boneless chicken breasts
- 2 tsp salt
- 1/2 tsp pepper
- 4 Tbsp olive oil
- 10 small white onions
- 1/2 lb mushrooms (washed and sliced)
- 1 10 3/4 oz can of tomato bisque soup
- 3/4 cup dry red wine
- 3/4 tsp oregano
- 3/4 tsp basil
- 2 Tbsp minced parsley
- 10 pitted ripe olives (sliced)
Instructions
- Sprinkle the chicken breast with salt and pepper and allow to stand for 5 - 10 minutes.
- In a large skillet saute chicken in the hot olive oil for 5 minutes.
- Turn over and add the onions, mushrooms and garlic. Cook 5 minutes on this side of breast.
- Combine the soup, wine, oregano and basil - mix well - get the lumps out.
- Pour the soup mixture over the chcken breasts.
- Bring to a boil and drop down to medium low heat and cover.
- Cook covered for 15 minuts on simmer or until the chicken is done.
- Stir in the parsley and olives.
- Serve over rice.
