    Recipe Introduction


    In Cuban this dish is called - ARROZ AMARILLO CON PETIT POIS


    List of Ingredients


    • 1/4 cup olive oil
    • 1 medium onion (chopped)
    • 2 garlic cloves (minced)
    • 2 1/2 cups chicken stock
    • 1 cup long grain white rice
    • juice from 1/2 lemon
    • 1 cup fresh peas or frozen petit pois
    • Salt and fresh ground pepper to taste


    Instructions


    1. In a large sauce pan heat the olive oil over medium heat.
    2. Add the onions and garlic and saute for 4 to 6 minutes until translucent.
    3. Stir in the chicken stock and raise the heat to medium high.
    4. When the stock comes to a boil add the rice, lemon juice and peas if your are using fresh peas. (if you are using frozen add during the last 10 minutes of cooking)
    5. Reduce the heat to medium low and simmer - covered for 20 - 25 minutes - stir occasionally.
    6. Watch for all the liquid to be absorbed and the rice is tender. Serve warm.
