Cuban Yellow Rice and Peas

Recipe Introduction

List of Ingredients
- 1/4 cup olive oil
- 1 medium onion (chopped)
- 2 garlic cloves (minced)
- 2 1/2 cups chicken stock
- 1 cup long grain white rice
- juice from 1/2 lemon
- 1 cup fresh peas or frozen petit pois
- Salt and fresh ground pepper to taste
Instructions
- In a large sauce pan heat the olive oil over medium heat.
- Add the onions and garlic and saute for 4 to 6 minutes until translucent.
- Stir in the chicken stock and raise the heat to medium high.
- When the stock comes to a boil add the rice, lemon juice and peas if your are using fresh peas. (if you are using frozen add during the last 10 minutes of cooking)
- Reduce the heat to medium low and simmer - covered for 20 - 25 minutes - stir occasionally.
- Watch for all the liquid to be absorbed and the rice is tender. Serve warm.
