    Wild rice is a staple in Minnesota!


    List of Ingredients


    • 2 cups wild rice (12 oz)
    • 2 tbsp olive oil
    • 1 medium onion (finely chopped)
    • 3 cups chicken broth
    • 4 cups water
    • 2 tsp unsalted butter
    • 1 tsp salt
    • 1/4 tsp black pepper


    Instructions


    1. Rinse the rice in a large sieve under cold water - then drain.
    2. Heat the oil in a 5 qt heavy pot over moderate heat until HOT but not smoking, then cook onion and stir occasionally. Until golden - maybe 5 minutes or so.
    3. Add rice and cook stirring until fragrant - about 3 minutes.
    4. Stir in the broth and water and bring to a boil.
    5. Reduce heat to low and simmer, covered until the rice is tender (grains will split open). 1 - 1 1/4 hour.
    6. Drain well in sieve and transfer to a bowl.
    7. While the rice is cooking melt butter in a 10 in skillet over med heat until foam subsides then cook almonds stirrring until golden. (3 minutes)
    8. Add almonds, salt and pepper to rice and stir gently to combine.
