Wild Rice and Almond Pilaf

Recipe Introduction
Wild rice is a staple in Minnesota!
List of Ingredients
- 2 cups wild rice (12 oz)
- 2 tbsp olive oil
- 1 medium onion (finely chopped)
- 3 cups chicken broth
- 4 cups water
- 2 tsp unsalted butter
- 1 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse the rice in a large sieve under cold water - then drain.
- Heat the oil in a 5 qt heavy pot over moderate heat until HOT but not smoking, then cook onion and stir occasionally. Until golden - maybe 5 minutes or so.
- Add rice and cook stirring until fragrant - about 3 minutes.
- Stir in the broth and water and bring to a boil.
- Reduce heat to low and simmer, covered until the rice is tender (grains will split open). 1 - 1 1/4 hour.
- Drain well in sieve and transfer to a bowl.
- While the rice is cooking melt butter in a 10 in skillet over med heat until foam subsides then cook almonds stirrring until golden. (3 minutes)
- Add almonds, salt and pepper to rice and stir gently to combine.
