    American Potato Salad

    Recipe Introduction


    Often we would have both German and American Potato Salad at picnics or events.


    List of Ingredients


    • 2 lb equal sized boiling potatoes.
    • 3 Tbsp cider vinegar
    • 1 tsp salt
    • 3/4 cup chopped celery
    • 1/2 cup chopped onion
    • 3 large hard boiled eggs - chopped
    • 1 cup mayonnaise
    • Salt and pepper to taste


    Instructions


    1. Cover the potatoes with salted cold water by 2 inches in a 3 qt saucepan and simmer until tender. (15-25 minutes) Depends on the size of the potatoes.
    2. Drain in a colander and cool just slightly.
    3. While simmering the potatoes whisk together vinegar and salt in a large bowl until the salt is dissolved.
    4. When potatoes are just cool enough to handle peel and cut into 1 inch pieces.
    5. Add potatoes to vinegar mixture.
    6. Toss gentely with a rubber spatula to combine.
    7. Allow to cool to room temp - at that time add the celery, onion, eggs and mayonnaise.
    8. Salt and pepper to taste.
    9. Stir GENTLY to combine.
    10. Serve at room temp or chilled.
