Cucumber and Tomato Salad

Good summer salad
List of Ingredients
- 4 tomatoes
- 1/2 cucumber
- 1 bunch green onions
- 1 bunch purslane or watercress - well rinsed
- 1/3 cup extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 1 tsp chopped fresh mint
- 1 tsp chopped fresh fennel
- salt and pepper to taste
- Halved stuffed olives - (garnish)
Instructions
- Put tomatoes into a bowl.
- Pour boiling water over tomatoes and let stand 1 minute.
- Take from hot water and put into cold water.
- Leave stand for 1 minute.
- Peel and dice into small dice and put into a bowl.
- With a sharp knife dice the cucumber to the same size as the tomatoes.
- Add the tomatoes and cucumbers together.
- Trim and chop green onions - add to the mix.
- Break the purslane or watercress into small sprigs.
- Mix with tomato and cucumber.
- In a bowl whisk the olive oil, lemon juice, mint, fennel, salt and pepper.
- Pour over the salad.
- Garnish on top with halved stuffed olive.
- Serve chilled or room temp.
