    Good summer salad


    List of Ingredients


    • 4 tomatoes
    • 1/2 cucumber
    • 1 bunch green onions
    • 1 bunch purslane or watercress - well rinsed
    • 1/3 cup extra virgin olive oil
    • 2 Tbsp fresh lemon juice
    • 1 tsp chopped fresh mint
    • 1 tsp chopped fresh fennel
    • salt and pepper to taste
    • Halved stuffed olives - (garnish)


    Instructions


    1. Put tomatoes into a bowl.
    2. Pour boiling water over tomatoes and let stand 1 minute.
    3. Take from hot water and put into cold water.
    4. Leave stand for 1 minute.
    5. Peel and dice into small dice and put into a bowl.
    6. With a sharp knife dice the cucumber to the same size as the tomatoes.
    7. Add the tomatoes and cucumbers together.
    8. Trim and chop green onions - add to the mix.
    9. Break the purslane or watercress into small sprigs.
    10. Mix with tomato and cucumber.
    11. In a bowl whisk the olive oil, lemon juice, mint, fennel, salt and pepper.
    12. Pour over the salad.
    13. Garnish on top with halved stuffed olive.
    14. Serve chilled or room temp.
