Fig and Stilton Salad

Winter Salad
List of Ingredients
- 3/4 cup ruby port
- 1/4 cup dry red wine
- 1/4 cup vegetable oil
- 3 tbsp balsamic vinegar
- 2 tbsp walnut oil
- 1 tbsp sugar
- 1 tbsp red wine vinegar
- 1/2 tbsp worcestershire sauce
- 1/2 tbsp mild flavored molasses
- 1/4 tsp onion powder
- 2 cup mission figs stemmed and cut in half lengthwise
- 1 5 oz bag of mixed baby greens - 10 cup loosely packed
- 4 oz Stilton cheese crumbled (about 1 1/4 cups)
- Salt and pepper to taste
Instructions
- Whisk in first 10 ingredients in a medium bowl to blend. (Dressing can be made ahead - regrigerate)
- Bring vinaigrette and figs to simmer in heavy large nonstick skillet over medium high heat.
- Simmer until dressing is slightly syrupy - stir occasionally - about 8 minutes.
- Cool slightly
- Season to taste with salt and pepper
- Divide greens among 6 plates. Spirnkle cheese over greens.
- Ladle warm dressing and figs over salads ans serve.
