German Potato Salad

Old family favorite - at least back to Grandma Saffert
Recipe Introduction
The BEST Potato Salad! Try NOT to break up the slices of potatoes.
List of Ingredients
- 4 lbs red firm potatoes boiled
- 6 slices of thick bacon cubed
- 3 small onions chopped
- 3 tbsp flour
- 1 cup water
- 1/2 cup vinegar
- 1/4 cup sugar
- salt and pepper to taste
Instructions
- Cook the potatoes in jackets. DO NOT overcook as they will fall apart!!! Important!!!
- Peel and slice potatoes. Set aside in a large bowl.
- Fry the bacon until brown and crumble. Remove the bacon from the pan.
- Add the onions, flour, water, vinegar and sugar. Boil together until glossy.
- Pour over the potato slices and add bacon.
- Mix with care as not to break the potato slices.
Final Comments
Can be served HOT or COLD. Both ways are OUTSTANDING!
