    Old family favorite - at least back to Grandma Saffert


    Recipe Introduction


    The BEST Potato Salad! Try NOT to break up the slices of potatoes.


    List of Ingredients


    • 4 lbs red firm potatoes boiled
    • 6 slices of thick bacon cubed
    • 3 small onions chopped
    • 3 tbsp flour
    • 1 cup water
    • 1/2 cup vinegar
    • 1/4 cup sugar
    • salt and pepper to taste


    Instructions


    1. Cook the potatoes in jackets. DO NOT overcook as they will fall apart!!! Important!!!
    2. Peel and slice potatoes. Set aside in a large bowl.
    3. Fry the bacon until brown and crumble. Remove the bacon from the pan.
    4. Add the onions, flour, water, vinegar and sugar. Boil together until glossy.
    5. Pour over the potato slices and add bacon.
    6. Mix with care as not to break the potato slices.


    Final Comments


    Can be served HOT or COLD. Both ways are OUTSTANDING!
