    Somewhat like French onion - but more mild.


    List of Ingredients


    • 2 Tbsp Butter
    • 2 1/2 large onions - sliced
    • 1 Tbsp flour
    • 4 1/2 cups hot beef stock
    • salt and pepper to taste
    • 2 Tbsp white wine
    • 4 Tbsp Heavy Cream
    • 2 egg yolks
    • Fresh parsely and/or chives
    • 1 Tbsp butter
    • 2 slice of white bread - cubed and toasted


    Instructions


    1. Heat the butter in a kettle and add peeled and sliced onions (rings) and brown nicely to a nutty brown.
    2. Sprinkle with flour and heat for 1 minute.
    3. Slowly add the hot stock while you stir.
    4. Season with salt and pepper.
    5. Simmer for 20 minutes
    6. While the soup is simmering. Tast bread cubes in a frying pan in 1 Tbsp butter. Set aside.
    7. In a cup blend the egg yolks with the wine and cream. Add some more salt and pepper.
    8. Pull soup off the burner and stir in the egg mixture.
    9. Cover and let sit for 2 minutes.
    10. Serve in preheated soup bowls.
    11. Sprinkle with toasted bread crumbs and parsley or chives.
