German Onion Suppe (Soup)

Recipe Introduction
Somewhat like French onion - but more mild.
List of Ingredients
- 2 Tbsp Butter
- 2 1/2 large onions - sliced
- 1 Tbsp flour
- 4 1/2 cups hot beef stock
- salt and pepper to taste
- 2 Tbsp white wine
- 4 Tbsp Heavy Cream
- 2 egg yolks
- Fresh parsely and/or chives
- 1 Tbsp butter
- 2 slice of white bread - cubed and toasted
Instructions
- Heat the butter in a kettle and add peeled and sliced onions (rings) and brown nicely to a nutty brown.
- Sprinkle with flour and heat for 1 minute.
- Slowly add the hot stock while you stir.
- Season with salt and pepper.
- Simmer for 20 minutes
- While the soup is simmering. Tast bread cubes in a frying pan in 1 Tbsp butter. Set aside.
- In a cup blend the egg yolks with the wine and cream. Add some more salt and pepper.
- Pull soup off the burner and stir in the egg mixture.
- Cover and let sit for 2 minutes.
- Serve in preheated soup bowls.
- Sprinkle with toasted bread crumbs and parsley or chives.
