List of Ingredients
- 3 - 4 lbs leg of lamb cut into 1 1/2 inch cubes
- 2 tbsp butter
- 2 tbsp vegetable oil (like Wesson)
- 2 1/2 cups water
- 1/2 cup chicken broth
- 2 tsp salt
- 1/4 tsp thyme (crushed)
- 1/4 tsp fresh ground pepper
- 2 cloves garlic (crushed)
- 3 - 4 medium red potatoes scrubed and cut in half
- 6 -8 small white onions
- 1 (24oz) package of frozen peas
- 1/4 lb fresh mushrooms (washed and sliced)
- 1 cup milk
- 1/3 cup Ceresota flour
Instructions
- Brown the lamb cubes wi9th butter and oil a large Dutch oven.
- Add water, chicken broth and seasonings.
- Cover and simmer for one hour
- Remove any and all surface fat
- Add potatoes and onions, simmer, keep covered - cook until vegetables are done. (around 15 minutes) Add peas and mushrooms at about 8 minutes
- Combine milk and flour in a small bowl, stir until smooth.
- Add flour mix to the boiling stew and boil for 1 minute.
- Correct seasonings
