    A Mardi Gras favorite...everyone likes it and it's simple!


    List of Ingredients


    • 2 Tbsp butter
    • 1 large onion (chopped)
    • 1 Green Bell Pepper (chopped)
    • 2 celery ribs (diced)
    • 3 cups (1 lb) cooked ham (chopped into cubes)
    • 1 lb Cajun (or other spicy) sausage (sliced)
    • 1 8oz can tomato sauce
    • 1/2 tsp salt
    • 1/2 tsp ground pepper
    • 1/4 tsp Cajun spice
    • 5 cup cooked white rice


    Instructions


    1. Melt Butter in a large skillet oever med heat.
    2. Add onion, green pepper, celery, and saute until all are tender.
    3. Add the cubed ham and sliced sausage, tomato sauce, pepper, salt and spice. Cook for 20 minutes over medium heat - stir often.
    4. This is a good time to start cooking your 5 cups of white rice (per package instruction)
    5. Once the meat and onion mixture has cooked for 20 minutes transfer into a dutch oven.

    6. Stir in the cooked rice into the meat and onion mixture and stir well.

    7. Cover and cook on low heat for 30 minutes - stir every once and a while.
