    Recipe Introduction


    A Christmas morning tradition at Chris's house.


    List of Ingredients


    • 4 tbsp unsalted butter
    • 1 medium white onion cut into 1/2 inch dice
    • 2 celery stalks, sliced into 14 inch dice.
    • 4 cups milk
    • 2 cups heavy cream
    • 2 tsp coarse salt
    • 1/2 tsp cayenne pepper
    • 1/2 tsp ground white pepper
    • 1 pint shucked oysters with liquor (juice)
    • paprika (garnish)
    • Oyster crackers (garnish, side)


    Instructions


    1. Heat the butter in a saucepan over a medium low heat.
    2. Add onion and celery and cook until softened about 8 minutes. Do NOT brown.
    3. Add milk, cream, salt, cayenne, white pepper and liquor.
    4. Bring just to a boil.
    5. Cook barely simmering 5 minutes.
    6. Add oysters, cook just until the edges curl (3 to 4 minutes).
    7. Garnish with a sprinkle of paprika and crackers.
    8. Serve


    Final Comments


    Crackers can go on the side or on top when serving. This is best made with freshly shucked oysters.
