Wonderful hearty Italian soup
List of Ingredients
- 8 cups fat free low sodium chicken broth
- 2 can (15oz) cannellini beans, rinsed and drained.
- 3 carrots sliced
- 3 cloves garlic sliced
- 2 cups (8oz) ditalini or other small pasta
- 3 Tbsp grated parmesan cheese
- 3 Tbsp fresh chopped parsley
Instructions
- Place broth, beans, carrots and garlic in a slow cooker, cook on low for 4 hours.
- Stir in pasta and cook until tender, 1 to 2 hours more.
- Garnish with Parmesan and parsley.
Final Comments
Easy and healthy - but you need to remember it takes about 5 hours to cook!
