    Slow Cooker Beef Stew

    Recipe Introduction


    Makes 6 - 8 servings


    List of Ingredients


    • 3 carrots, peeled and sliced into 1/4 in coins
    • 3 large potatoes, peeled and cut into 1 in cubes
    • 1 large onion, cut in half and sliced thin
    • 3 lbs of beef cubes for stew ( 1 1/2 in thick)
    • 3 cups beef stock or broth
    • 1 cup canned tomato sauce
    • 1 tsp dried thyme
    • 1 bay leaf
    • 1/2 tsp whole black pepppercorns
    • 2 cups frozen peas
    • 1 tbsp minced fresh parsley
    • Salt and Pepper to taste


    Instructions


    1. Layer carrots, potatoes, and then onions in the Slow Cooker stoneware liner. Top with beef, bay leaf and black peppercorns.
    2. In a large mixing bowl, combine the stock, tomato sauce and thyme.
    3. Pour the tomato mixture over the meat and vegetables.
    4. Cover and set power switch to AUTO. Stew will be done in 7 to 8 hours. (or cook at LOW for 8 - 9 hrs)
    5. Stir in the peas 15 to 20 minutes prior to serving and cook on HIGH.
    6. Taste and adjust. Salt and pepper to taste.
    7. Stir in the parsley and remove the bay leaf.
    8. Serve
