Recipe Introduction
Taco Loco served the best Lime Soup I ever tasted - it was OUTSTANDING! Here is the recipe:
List of Ingredients
- 2 corn tortillas
- oil for frying
- 2 tsp vegetable oil
- 1/3 cup chopped onion
- 1/4 cup canned chopped green chiles
- 4 cup chicken broth
- 1 cup shredded cooked chicken breast
- salt
- 1 tomato chopped
- 1 tsp lime juice
- 4 lime slices
Instructions
- Cut tortillas in 2 x 1/2 inch strips. Pour oil for frying into a small saucepan (about 1/2 inch deep) Heat to 365 F (185 C). Fry tortilla strips in hot oil until browned and crisp. Drain onto a paper towl.
- Heat 2 teaspoons vegetable oil in a large saucepan. Add the onions and chiles.
- Saute until onion is tender and not brown.
- Add broth, chicken strips and salt to taste.
- Cover and simmer for 20 minutes.
- Add tomato simmer another 5 minutes.
- Stir in lime juice.
- To serve ladle into bowls. Add the fried torilla strips and float a lime slice on top each bowl.

I have seen a lot of versions of this recipe - but this is the best!
