    Recipe Introduction


    Taco Loco served the best Lime Soup I ever tasted - it was OUTSTANDING! Here is the recipe:


    List of Ingredients


    • 2 corn tortillas
    • oil for frying
    • 2 tsp vegetable oil
    • 1/3 cup chopped onion
    • 1/4 cup canned chopped green chiles
    • 4 cup chicken broth
    • 1 cup shredded cooked chicken breast
    • salt
    • 1 tomato chopped
    • 1 tsp lime juice
    • 4 lime slices


    Instructions


    1. Cut tortillas in 2 x 1/2 inch strips. Pour oil for frying into a small saucepan (about 1/2 inch deep) Heat to 365 F (185 C). Fry tortilla strips in hot oil until browned and crisp. Drain onto a paper towl.
    2. Heat 2 teaspoons vegetable oil in a large saucepan. Add the onions and chiles.
    3. Saute until onion is tender and not brown.
    4. Add broth, chicken strips and salt to taste.
    5. Cover and simmer for 20 minutes.
    6. Add tomato simmer another 5 minutes.
    7. Stir in lime juice.
    8. To serve ladle into bowls. Add the fried torilla strips and float a lime slice on top each bowl.

    I have seen a lot of versions of this recipe - but this is the best!
