Balsamic Roasted Carrots

List of Ingredients
- 2 lbs carrots cut into 3 /12 by 1/2 in sticks
- 2 Tbsp olive oil
- 1/4 tsp salt
- 2 tbsp balsamic vinegar
Instructions
- Preheat the oven to 425
- slice carrots into sticks (3 1/2 by 1/2)
- Toss carrots with oil and salt in a shallow roasting pan (1 inch deep)
- Roast carrots in the middle of the oven stirring occasionally until golden and tender - 25 to 30 minutes.
- Drizzle vinegar over the carrots and shake pan a few times.
- Roast carrots until most of the vinegar is evaporated - about 2 minutes.
