    Balsamic Roasted Carrots

    Active time 10 minutes / start to finish 40 minutes


    List of Ingredients


    • 2 lbs carrots cut into 3 /12 by 1/2 in sticks
    • 2 Tbsp olive oil
    • 1/4 tsp salt
    • 2 tbsp balsamic vinegar


    Instructions


    1. Preheat the oven to 425
    2. slice carrots into sticks (3 1/2 by 1/2)
    3. Toss carrots with oil and salt in a shallow roasting pan (1 inch deep)
    4. Roast carrots in the middle of the oven stirring occasionally until golden and tender - 25 to 30 minutes.
    5. Drizzle vinegar over the carrots and shake pan a few times.
    6. Roast carrots until most of the vinegar is evaporated - about 2 minutes.
