    Lilly's Sweet Potato Pseudo Souffle

    Recipe Introduction


    This is one of Karen's mom's favorite recipes.


    List of Ingredients


    • 2 1/2 cups mashed canned or cooked sweet potatoes - 1lb 2oz or 2 lbs fresh
    • 1/2 tsp salt
    • dash pepper
    • 2 tbsp butter
    • 10 marshmallows
    • 1 cup chopped pecans
    • 1 tbsp butter
    • 1/2 cup honey


    Instructions


    1. Preheat oven to 350
    2. Combine mashed sweet potatoes, salt, pepper and 2 tbsp butter.
    3. Divide quantity, place 1/2 in casserole, spread the marshmallows over the sweet potatoes.
    4. Cover with remainder of sweet potatoes.
    5. Tope with pecans, use more if you really like nuts!
    6. Heat the honey and 1 tbsp of butter in a small skillet over a high heat. Drizzle over the mixture
    7. Bake at 350 for 20 - 25 minutes.

    Karen is from Minnesota and now lives in Santa Fe. She was Chris's boss at Dayton's.
