Lilly's Sweet Potato Pseudo Souffle

Recipe Introduction
This is one of Karen's mom's favorite recipes.
List of Ingredients
- 2 1/2 cups mashed canned or cooked sweet potatoes - 1lb 2oz or 2 lbs fresh
- 1/2 tsp salt
- dash pepper
- 2 tbsp butter
- 10 marshmallows
- 1 cup chopped pecans
- 1 tbsp butter
- 1/2 cup honey
Instructions
- Preheat oven to 350
- Combine mashed sweet potatoes, salt, pepper and 2 tbsp butter.
- Divide quantity, place 1/2 in casserole, spread the marshmallows over the sweet potatoes.
- Cover with remainder of sweet potatoes.
- Tope with pecans, use more if you really like nuts!
- Heat the honey and 1 tbsp of butter in a small skillet over a high heat. Drizzle over the mixture
- Bake at 350 for 20 - 25 minutes.

Karen is from Minnesota and now lives in Santa Fe. She was Chris's boss at Dayton's.
