Mashed Potatoes

Recipe Introduction
These take a little extra work - but worth the effort. Follow these directions and you will have the BEST MASHED POTATOES known to man!
List of Ingredients
- 2 lbs russet or Yukon Gold potatoes, peeled, eyes and blemishes removed and cut into 2 inch chunks
- 3/4 tsp salt
- 6 Tbsp butter (soft)
- 1 cup whole milk or 1/2 and 1/2 WARM - warm NOT hot!
- Ground pepper to taste
Instructions
- Put the potatoes in a large saucepan, add cold water to cover and 1/2 tsp salt.
- Bring to a boil and continue to cook over medium heat until the potatoes are tender when pierced with a knife - 15 - 20 minutes ---- DO NOT OVERCOOK
- Drain the potatoes well and return pan to low heat.
- Using a ricer - rice the potatoes back into the pan and use a whisk or wooden spoon to belnd in the soft butter, then the warm milk.
- (OR) Return the potatoes to saucepan and mash over low heat with a potato masher. Add the butter and warm milk while stirring.
- Season mashed potatoes with 1/4 tsp salt and a pinch of black pepper and serve immediately.
