    Stephen is from TN and this is one of his family recipes.


    List of Ingredients


    • 3 medium red onions, peeled and cut into paper thin slices.
    • 3 medium yams (about 1 lb) cut into thin round slices.
    • 2 cups apple cider
    • 2 tsp brown sugar
    • 1/2 tsp salt
    • 1/4 tsp freshly ground pepper
    • 1 tbsp fresh thyme leaves
    • 1 tbsp butter (cut up)


    Instructions


    1. Preheat the oven to 350.
    2. In a 9 inch round dish, place the yams in onions in alternate layers.
    3. Pour in the apple cider, brown sugar and salt and pepper into a small sauce pan and stir over medium heat until the sugar dissolves.
    4. Pour over the onion and the yams and sprinkle on the thyme.
    5. Bake for 1 hour covered with foil, rmove the foil and bake for 30 more minutes. Baste often.

    A perfect Thanksgiving side dish!
